A Personal Note From Steven
Sometimes when you meet someone you fall in love the beautiful human being they are, and you are moved by the dreams they hold dear.
The first time I met Paolo we had lunch at a the Carte Blanche Food Cart and he told me that he had just moved to America – to Portland, Oregon from Florence, Italy to open a Food Cart.
As I asked more questions he hesitantly shared that his real long-held dream was to open a restaurant, and that his plan was to leverage the food cart he wanted to open into that restaurant.
I was moved by his story and his dream. I know what it like to hold a dream in your heart for a very long time.
With tears in my eyes I told that he would get that food cart open and that I would help him in every way that I could and that he would see his dream of opening a restaurant come true.
Paolo was understandably taken aback by what this crazy American stranger he had just met was telling him.
I believed in the beauty of his dream, and I just knew in my gut that it would come true.
While we were sitting there I told Paolo that someday he would open his restaurant and that he would have a private friends & family event the day before it opened to the public and I would be there, and that I would cry (tears of joy) and that he would hug me.
I began cheering on Paolo and his amazing wife Elizabeth and helping them however I could.
A handful of years later at the private friends & family event he and Elizabeth had the day before they opened their restaurant I cried (tears of joy) and Paolo hugged me.
